Homemade Dumplings

Tonight, I took a stab at making homemade dumplings.  I’m getting a little tired of cooking and eating the same thing all of the time.  These were a complete experiment – with no recipe – and turned out quite tasty!

Firstly, I opted to cook my filling fully in the frying pan before assembling the dumplings.  You can do this or you can put the filling in raw, however, it will need extra time in the water/soup in order to cook the raw meat/veggies.  I put about 3 tablespoons of oil in a pan and added finely chopped mushrooms, carrots, chicken breast, asparagus, onions & peppers.  I seasoned to taste with salt, pepper, onion powder and curry powder.  I also added one egg for a bit of binder since I wasn’t using a ground meat.  You can choose to season this however you’d like.  And you can add whatever veggies/meat you like.

 Then, I placed a small amount of filling onto a wonton wrapper that has been brushed with egg whites.  I folded them in half and sealed by pressing the edges all the way around.  The egg white will hold the wrappers closed.  Then, I dropped them into boiling soup (I made mine from a chicken flavored bouillon cube) and cooked them for about 3 minutes.  Remove with a flat, slotted spoon as to not rip open dumplings (wonton wrappers are fragile).

I served these with fresh broccoli for the hubby and me and right in the soup for the kids.

WW Update – Week 20

Pounds lost in week 19 : 1.2 pounds

Total weight lost so far : 21.8 pounds

Over the past month I’ve lost and gained the same damn 2 pounds.  I’m still down -.8, but next week (for sure!) I’m getting it back.  So long Wonder Twins. Say hello to the Fantastic Four (I hope!)

This week I was a good girl and stuck to program.  I was even good on my trip to Lancaster, PA where I ate at Cracker Barrel, a Chinese buffet and a diner.  Losing weight and living a normal life can be done!

I’m Fragile!

I'M SICK

I’m officially sick.  And I’ve officially decided that I’m fragile.  One chilly afternoon outside without a coat, being exposed to a kid with sniffles and getting the flu shot this week have all done me in.  Now, I’ve got head & chest congestion, a nasty cough, mad sniffles and a nose that is trying to run away from me.  AND it isn’t even winter yet!  UGH!  I’m hoping this is not an indication of things to come.  I’m already doing the Heebie jeebie swine flu stay away ritual. Then, I’m going to the doctor for drugs and Whole Foods for vitamins!  Stay well, friends.

The Flu Shot

Today I got my flu shot.  The last time I had a flu shot was 7 years ago.  You know why?  Because that was the last time I had the flu.  I only ever seem to get the flu when I get the flu shot.  Against my better judgement and only due to this swine flu mess, I decided to get the flu shot this year.  Also, because CheezWaster has entered  the germ zone nursery school.  Needless to say, I already feel headachey and just unwell.  I had a bit of a sniffle and sore throat this morning, which the nurse said was fine, so now I’m wondering if this is the dreaded “flu shot” year for me or if it is just a cold (or psychosomatic reaction).  We shall see.  Needless to say (and after having read far too much information about it), I’m not getting the swine flu shot.

Homemade Applesauce

A few weeks ago, we went apple picking with our friends to Wilklow Orchards, their family owned apple orchard.  Since we picked 2 very large bags of apples, I decided to make homemade applesauce and can it.  I didn’t really use a recipe, I just kind of  made it up as I went along.

 Firstly, I sterilized my jars.

Then, I peeled and finely chopped my apples.  Depending on how much applesauce you want to make, will dictate how many apples you need to cut up.  I cut up an entire large bag of apples to make one soup pot of applesauce.  Remember the apples are going to cook down a lot.

You can add as much or as little sugar & spice to taste.  For the entire pot, I added about 1 Tablespoon of Pumpkin Pie Spice (a nice mix of spices for applesauce) and a 1/2 cup of sugar.
Simmer on Low Heat Until Desired Consistency

 Simmer the apples in a COVERED pot (allows apples to steam) on low heat until desired consistency (DO NOT ADD ANY WATER).  I like my applesauce chunky so after a few hours and a few passes of the potato masher, I canned mine.  My pot wasn’t quite full and I got 4 3/4 pint jars (larger than a jelly jar) of tasty applesauce.

WW Update – Week 19

Welcome back, weight loss buddies.  I did not weigh in last week and unfortunately, vacation was not kind to me, however, it wasn’t totally horrible.  I gained back the 2 pounds I lost 2 weeks ago.  But, my 2 nights of Bruster’s ice cream were totally worth it.  But, now it is back on track and back on the program.

Every 20 Minutes???

Parenting Magazine reported in its most recent issue (Oct. 2009) that:

The average toddler melts down every 20 minutes.

Uh-oh!  I’ve got 2 and we’re embarking on a 6+ hour drive to Virginia on Saturday.  Thank heavens for the portable DVD player and the stash of new stuff I’ve got for the kids.  I’ve got a backpack for each of them in which I’ve packed a few special snacks as well as various new toys/books picked up online or at the Target dollar spot.  I’ve also purchased a few new DVDs so the kids will be watching never before seen movies/cartoons.  Not to mention, I purchased them each a new toy for when we arrive at our destination.  Hopefully, this will help prevent at least a few meltdowns along the way.

The New & Improved Candyland

While The Destroyer napped, CheezWaster and I decided to combine our afternoon snack with our game of Candyland.  This also greatly reduced the number of M’s that I could eat (must be mindful of our WW points!) – that is unless I play cheat like CheezWaster!  Whenever he would land on an M&M free space, he would look at me with those puppy dog eyes and say, “Mama, there’s no M on this space.  I go to the next {insert color here} space?”  How could I resist?!

WW Update – Week 17

Pounds lost in week 17 : 2 pounds

Total weight lost so far : 22.6 pounds

This week not only did I get a 5 pound star for going over 20 lbs (which technically I did last week but I didn’t stay for the meeting), but I also got a key chain for hitting my 10% target.  Yes, folks, I am 10% lighter than I was 17 weeks ago.  This was one of major goals to hit and but a mere step on the way to getting down to goal weight.  If I can do 22.6, then I can do 56 more…..it might take me until this time next year, but that is my ultimate goal.
